Under chef Reyna Mendoza, we learned to make Tamales and other traditional Zapotec dishes.


Zapotec cuisine, rooted in the customs of the Zapotec people of Oaxaca, MX, stresses ingredients such as corn, beans, squash, and various chiles, which are used in dishes like mole, tamales and corn beverages.


Learning international dishes enhances a chef’s understanding of diverse cuisines and techniques which makes them more versatile and ultimately enables them to create more interesting and innovative menus.
